1 1/2 cups flour
1 tablespoon baking powder
3 tablespoons sugar
pinch of Salt
2 eggs, slightly beaten (with a fork will do)
1 glass of milk
60g butter
3-5 tablespoons of honey
about half a glass of blueberries, or more if you like.
In a medium sized bowl, mix the flour,baking powder, sugar and salt.
Melt the butter on a small fire.When it is melted, pour in the milk and the eggs.
Stir, then pour into the flour mixture.Mix (or whip) well until smooth.
Make sure no dry flour is left at the bottom.Pour in the honey and stir.
The are two ways for the blueberries-you can either blend them first or throw them in whole.
Mind-if you throw them in whole they might charr on the pan. Either way, the mixture
should turn a pretty blue.
Cover with cloth and leave to sit for 20 minutes.
Then pour little circles (~5cm diameter) of the mixture onto a hot frying pan.
Fry on a small fire-they burn quickly. Wait until they are golden-brown, but try not to lose the blue entirely. It should take a few seconds for the first side. Flip them over, fry the other side the same way.
They are very tasty with cream and...blueberries.:)
